Some people choose to use High Phenolic Extra Virgin Olive Oil in a spoon like a supplement and some people want to include our olive oils Drop of Life and PhenOLIV into their regular diet. Here's a recipe to help incorporate your daily dose of HP-EVOO into one of your daily meals.
Low-carb soup makes it suitable for many diets and by removing or replacing Yoghurt with Vegan Yoghurt or cream is also a Vegan dish! This is really a soup for everyone!
Serves: 4
Total Time: 20 mins
Can be stored in the fridge for 3-4 days
Ingredients
1 Onion - Finely Chopped
3 Gloves Garlic - Finely Chopped
1 Large Potato - Diced
300 gr Peas - Fresh or Frozen
700 ml Vegetable Stock or Water
1 Tablespoon Drop of Life Organic HP-EVOO
1 Tablespoon Lemon Juice/Zest
Salt & Pepper
for Serving
5 ml - PhenOLIV Organic HP-EVOO
Cooked Peas
To Taste - Chopped Herbs (e.g. Dill or Parsley)
To Taste - Ground Peanuts or Almonds or Croutons
Instructions
In a large pan, add 1 tbsp Drop of Life Organic, onion and garlic and cook until onion is almost see-through, tossing occasionally.
Add Potato, Peas and Vegetable stock.
Add Salt & Pepper and chopped herbs to taste.
Cook at low temperature for about 15 minutes until potatoes and peas are soft.
Remove a handful of cooked peas (for serving)
Remove from heat, add Lemon Juice and with a handheld blender, blend until smooth.
Serve with Ground Nuts or Croutons for crunch, Thyme and Chopped herbs of choice.
Add some Yoghurt or Cream to taste
Drizzle 5-10ml PhenOLIV Organic over the top and enjoy!
